1 small carrot, chopped
2 tablespoons mirin
2 tablespoons rice or cider vinegar
1 tablespoon soy sauce or tamari
2 tablespoon minced onion
1 tablespoon grated fresh ginger root
1 tablespoon prepared mustard (optional)
Place all ingredients in a blender and blend until smooth. Keeps covered in the fridge for about two weeks.
