Nut Free Valentine Hearts
1 cup pitted dates
1 cup dried cranberries
3/4 cup sunflower seeds (I prefer roasted but you can use raw)
1 t. salt (if seeds are unsalted)
Combine all ingredients in a food processor and blend for 1-2 minutes to combine. Let the processor rest so it doesn't overheat (maybe that's just mine!) and then keep processing in one-minute increments until a ball forms.
At this point you can roll into balls 1/2" in diameter and make what my son calls "rollie cookies" or flatte into a bar and cut out shapes. Kids love to make both!
Roll dough out in between two sheets of wax paper with rolling pin until about 1/4" thick. Chill one hour. Cut into shapes, or use cookie cutter.
Keep in a container for two weeks or in the fridge for up to a month.
These bars can feel a little more oily than ones you have made before because of the use of sunflower seeds instead of nuts. Just keep that in mind, especially if serving on paper hearts like I did here.
Makes 20 hearts or "rollie" cookies
