1 large head red cabbage
1/8 c. olive oil
Fresh herbs (like parsley)
Toasted spices (toast cumin, coriander, and mustard seeds in a pan - be very careful not to burn)
Thinly slice cabbage and spread on two large baking sheets. Toss with olive oil and season heavily with salt and pepper. Roast in a 375 degree oven until some of it is browned and crispy-caramel.
