Slow Cooker Tapioca Pudding
INGREDIENTS 1/2 gallon 1%, 2%, or whole milk 1/2 cup white sugar or maple syrup 1 cup small pearl tapioca 4 eggs 1 teaspoon vanilla
PREPARATION Break 4 eggs into slow cooker and lightly beat with fork or whisk. Add milk, sweetener of choice, and tapioca and stir until combined with eggs. Turn slow cooker on low and cook 5-6 hours. Begin stirring once every 30-60 minutes beginning in hour 3.
